While cooked long pork tatses well like pork those who have eaten it raw report more of a turkey taste FYI

The thing to remember with horse is not to cook it to fast less it become tough and stringy.

Query. would people try swan or hedgehog or some of those other weird feast meats?

Damn skippy I'd eat them.

Had Swan sausages and they were yum but ain't tried the whole critter yet.

The main problem I would have with hedgehog is the fact that they are usually seen in a most unappetising state (Hedgehog Spinners anyone). Just a visual connotation that I find off putting.

It's OK I don't do tequila worms either

I still want to do claybaked Kingfish or Salmon, but it's so damned expensive (the fish not the clay) supposedly the way to cook hedgehog as well.

Cheers

correct first gut your hedgehogs and stuff with the stuffing of your choice wrap in clay and chuck it into hot coals and cover with said coals not sure on cooking time but i think that would depend on thickness of clay and the heat of your coals, when its done you crack open the clay and out come all the quills and you are left with a feast fit for about half a person.

So a lot of hedgehogs would be needed to feed a small feast....

I would absolutely give swan a go. Not sure on the hedgehogs for the same reason as Bogue... But if it was served up I would most likely have at least a try.

*shrug* Don't see why not. Already tried a few before now, can't see any reason not to try others.

I tried game swan, it was astonishing. the breast meat was very much like steak - dark and lean and not at all like chicken. Very delicious and extremely full of flavour and not at all delicate.
